Add olive oil and cook until veggies are softened.</li><li>Step 2: After about 3-4 minutes, add minced garlic, salt, and black pepper to the veggies. Set aside and prep chicken.</li><li>Step 3: To prep your chicken, marinade it in olive oil, salt, black pepper, garlic powder, and onion powder overnight or for at least 30 minutes before cooking.</li><li>Step 4: Pan-sear the chicken for a couple of minutes before adding it to the oven to bake for 7 minutes at 145 degrees.</li><li>Step 5: Once you've taken the chicken out of the oven, let it rest as you cook the plantains.</li><li>Step 6: Cut the plantains into slices and pan-fry them until they're a golden brown.
